Ratatouille Recipe

Ratatoille makes for a flavorful and tasty side dish. It’s one of my favorite vegan dish that’s quick and easy. If you’ve got an abundance of veggies lying around in your fridge, you definitely need to make this recipe. You can make this with any vegetable of choice! Try this recipe for the best flavor. Super simple yet super impressive too!



  1. Boil/ steam 1 cup eggplant until soft.
  2. LAYER 1: Once the eggplant is cooked, mash the eggplant together with garlic.
  3. LAYER 2: Mix chopped tomato with basil leaves, oregano, salt & pepper.
  4. Assemble LAYER 1 and LAYER 2 on a tray or ramekin.
  5.  Assemble the thinly sliced veggies vertically in a way that the same veggie does not overlap one another to form a beautiful colorful dish.
  6.  Once the ingredients are assembled, drizzle with olive oil, season with salt and pepper.
  7.  Bake in the air fryer for 10 minutes at 200C.
